Berry and Cream Dream

Ingredients
450g/1 lb summer fruits and berries – raspberries, strawberries, redcurrants, cherries etc.
300 ml/_ pint double cream
50g/2 oz Golden Caster sugar
50g/2 oz Light Muscovado sugar
Directions

  • Divide the berries into 4-6 individual flame proof dishes or one large dish.
  • Whisk the cream until thick but not stiff.
  • Spoon the cream over the berries until they are evenly covered.
  • Sprinkle over the sugar to completely cover the cream and chill for a few hours.
