Elderflower Cordial
Ingredients
10 elderflower heads
300g/11oz Billington’s Unrefined Golden Caster Sugar
finely grated zest and juice of 2 lemons
finely grated zest and juice of 2 oranges

1 Gently rinse the flower heads and put into a large jug. Pour on 500ml of boiling water. Add the Golden Caster Sugar, orange and lemon zest and stir well until dissolved. Allow to cool.
2 Strain into a clean jug to remove flower heads and add the lemon and orange juice. Add several ice cubes and serve.
