Little Lemon Pots
Ingredients
900 ml/1_ pints double cream
250g/9 oz Billington's unrefined Golden Caster sugar
Zest and juice of 4 lemons
Directions
- Put all the ingredients into a pan and heat gently, stirring occasionally. Bring to the boil and boil gently for 5 minutes.
- Remove from the heat and leave to stand for 15 minutes. Strain through a sieve into a jug.
- Pour the mixture into ramekin dishes or small coffee cups and chill overnight before serving.
