Magic Muscovado Pudding
Ingredients
110g/4oz plain flour
175g/6oz Golden Caster sugar, 40g/11/2oz cocoa powder
2 teaspoons baking powder
Pinch salt
110ml/4 fl oz milk
2 tablespoons corn oil
2 eggs
50g/2oz walnuts, chopped
225g/8oz Light Muscovado sugar, 425ml/15 fl oz hot water
Directions
- Preheat the oven to Gas 4/180C/350F. Butter a 23cm/9 inch square tin or ovenproof dish.
- Sift the flour, 2 tablespoons cocoa powder, baking powder and salt into a mixing bowl.
- Add the milk, Golden Caster Sugar, oil and eggs stirring until smooth, then add the walnuts.
- Pour into a greased baking tin or dish. Mix together the remaining cocoa with the Light Muscovado sugar and sprinkle over the mixture in the tin.
- Pour over the hot water. DO NOT STIR.
- Cook for 30-45 minutes. Serve warm with whipped cream or ice cream if liked.
