Mango and Chicken Salad

Ingredients
Juice of 1 lime
1 garlic clove, crushed
1 green chilli, seeded and finely chopped
1 tbsp finely chopped fresh coriander
3 tbsp Billington’s Demerara sugar
1 tbsp soy sauce
450g/1lb chicken or turkey, breasts, skinned and cut into thin strips
1 tbsp olive oil
200g/7oz mixed salad leaves
1 mango, peeled and cut into chunks
25g/1oz pistachio nuts

For the dressing
1 tbsp olive oil
1 tbsp white wine vinegar
1 tbsp Billington’s Demerara sugar

Directions
Prepare the marinade by mixing together the lime juice, garlic, chilli, coriander, Demerara sugar and soy sauce. Pour over the chicken or turkey and chill in the fridge for two hours.

Heat the oil in the wok. Add the chicken and marinade and stir for about 8 minutes.

Combine the dressing ingredients.

Place the mixed salad leaves, mango and chicken or turkey in a large bowl and toss gently.

Serve sprinkled with pistachios and drizzle with the dressing.
