Salmon Salad with warm Lime Dressing

Ingredients
45ml/3 tbsp Billingtons Golden Granulated Sugar
rind and juice of 1 lime
10ml/2 tsp olive oil
salt and black pepper

SALAD
350g/12oz Scottish salmon, cooked, or smoked salmon pieces
175g/6oz pasta twists, cooked
50g/2oz mange tout, blanched
1 yellow pepper,de seeded and chopped
1 stick celery, sliced
15ml/1tablespoon fresh parsley, chopped
Directions

  • Place all the ingredients in a small saucepan, bring to the boil and, simmer uncovered for 2 minutes stirring occasionally.
  • Flake the salmon into a salad bowl, add the pasta and vegetables. Pour over the warm dressing and toss gently. Sprinkle with parsley.
