Thai Grilled Chicken

Ingredients
6 chicken legs or 10/12 chicken drumsticks

MARINADE
1 tsp. cracked black pepper
_ tsp. ground cumin
4 tsp. Billingtons Golden Granulated sugar
2 tsp. paprika
1 inch piece root ginger, peeled and grated
2 cloves garlic, crushed
1 pinch salt
1-2 tsp. hot chilli sauce, optional
3 tbs. vegetable oil

TO GARNISH AND SERVE
6-8 cos lettuce leaves
_ cucumber, cut into strips
4 spring onions, trimmed
2 limes, quartered
Directions

  • Score the chicken pieces deeply and set aside. To prepare the marinade, combine the marinade ingredients in a bowl, turn the chicken pieces in the mixture and allow at least 20 minutes for the flavours to mingle.
  • Preheat a moderate grill or barbecue and cook the chicken for 20 minutes turning once. Arrange chicken in a bowl lined with lettuce, then add the cucumber, spring onion and lime wedges. Serve with rice.
