Breakfast Waffles

The all powerful waffle is perfect for just about any meal, as a warming breakfast, a delicious lunchtime pick-me-up or dinner dessert.

Method

  1. Sift together the flour, baking powder and cinnamon in a large bowl then stir in the golden caster sugar.
  2. Separate the eggs, beat the yolks in a small bowl then add the milk, melted butter and vanilla extract.
  3. Gradually pour the egg yolk mixture into the dry ingredients and whisk together until smooth.
  4. In a food mixer, beat the egg whites until they form stiff peaks then carefully fold into the batter.
  5. Ladle a spoonful or two into the centre of a pre-heated waffle maker and leave to cook for 1-2 minutes or until golden brown.
  6. Serve warm, dusted with Billington’s Unrefined Golden Icing Sugar.
