Lime, Mango and Basil Sorbet

Method

  1. Place the roughly chopped mango, Billington’s Golden Icing Sugar, lime juice, lime zest and basil into a food processor
  2. Transfer into an ice cream machine and churn until the mixture clumps together into the middle of the machine - usually 30 minutes.
  3. Transfer into an ice cream container and freeze. Just before serving, remove from the freezer and allow to thaw for around 5 minutes
  4. Using a scoop, place 2 large scoops into some glasses and decorate with freshly chopped mango, lime zest and some basil.
